Recipe: Osteoarthritis Soup

Did you know that your diet and nutrition can play a major part in overall joint health? We’ve come up with a simple (and super tasty) Osteoarthritis Soup, consisting of key ingredients that are full of important nutrients needed for cartilage regeneration and vitamins containing anti-inflammatory and pain-relieving properties. Combined with superstar spices such as turmeric and ginger (which also help improve symptoms of arthritis), it’s a real taste sensation!

What you’ll need:

Red Onion

Carrots

Freshly Squeezed Orange Juice

Clove of Garlic

(Small) Piece of Ginger

Coconut Oil

Vegetable Stock

Curry Powder

Turmeric

A Sprinkle of Salt & Black Pepper

A Pinch of Nutmeg

To Garnish: 

½

Bunch of Coriander & Some Soy Yoghurt

Step One
First, start by peeling and finely chopping the onion, garlic, and ginger. Then wash the carrots and cut them into small cubes.

Step Two
Next, heat the coconut oil in a saucepan and sauté the onion, garlic and ginger. Add the carrots and fry for a further 3 minutes.

Step Three
Add 750ml of vegetable stock to the pan and leave to simmer for approximately 15-20 minutes. Add the curry powder, turmeric, salt, pepper & nutmeg and stir well.

Step Four
Lastly, purée the soup with a blender and add in the orange juice (bit by bit!) until the soup is at the desired consistency.

To Serve

Finely chop the coriander, sprinkle over the soup and refine with a little soy yoghurt.
